Everything starts from bread, 140 years ago the first Olivieri oven was born and even today bread is central to our tradition and at the heart of our concept of a contemporary Italian bakery.



Gambero Rosso publishes a prestigious guide every year, which includes the best bakeries and ovens in Italy that have managed to stand out.

Different are the factors that lead to selection, such as the choice of grains and research on leavening, but what truly tips the scales is what the bread tells.


For Olivieri 1882, bread is rooted in something deeper than tradition; it is a driving force that has always guided us and motivated us to improve every day. For us, bread is family, sharing, it is our primary identity.


Since the first edition, Gambero Rosso has awarded us the highest score of 3 BREADS out of 3, and for 2025, it has also confirmed this important recognition that highlights a quality we have cherished for generations.
