The Colomba is the traditional Easter cake. It is a cloud of butter, eggs, and flour, covered with a glaze enriched with almonds that, at the first bite, gives a slight crunchiness followed by incredible softness! It has a double leavening of more than 48 hours. Inside our 900g Colomba made with 100% live sourdough, you will find whole orange candied peels to give our Colomba a unique and natural orange scent. You will also notice the black specks of Madagascar Bourbon vanilla inside the dough. Our Colomba is very rich but refined in taste and extremely digestible thanks to the long leavening and the use of high-quality ingredients. It contains no preservatives, semi-finished products, flavors, or vegetable fats. It is 100% Artisanal and therefore entirely handmade, with the passion that has distinguished us since 1882.

Classic Colomba - Natural leavened baked confectionery - 900g (31.74 oz / 1.98 lbs) ℮ Ingredients: wheat flour* type 00, candied orange (17.4%) (orange peel 40%, sugar, glucose syrup), butter*, egg yolk* category A, sugar, natural sourdough (wheat flour* type 00, water), water, milk*, cream*, salt, wheat starch*, acacia honey, Bourbon vanilla from Madagascar. Glaze: sugar, egg white*, almonds*, rice flour, almond flour*, sunflower seed oil. Store in a cool, dry place at max 20-22°C. *Allergen ingredients - May contain traces of nuts, soy, and sesame.

Since 1882 we have been master bakers. The Colomba Olivieri 1882 is the quintessential Easter cake: it is a cloud of butter, eggs, and flour covered with a glaze of almonds, hazelnuts, pine nuts, and sugar that, with the first bite, reveals a slight crunch followed by incredible softness! The texture is extremely soft, the taste elegant yet decisive. It is a very rich cake but extremely digestible thanks to the long leavening process and the use of high-quality raw materials. It contains no preservatives, semi-finished products, flavors, or vegetable fats. It is 100% artisanal and therefore made entirely by hand, with passion, as tradition has dictated since 1882.

PROCESSING

For over 140 years we have been working artisanally, patiently following every process and working the dough with passion to create the true Colomba. Each Colomba is worked individually by hand, from refreshing the sourdough to shaping, to ensure the highest quality for each Colomba. The Colomba Olivieri 1882 involves a total of 4 days of processing, of which more than 48 hours are dedicated to natural maturation.

Raw materials

We are passionate about raw materials and their processing. Olivieri 1882 leavened products all have the same organoleptic characteristics that make the product a guarantee: the extremely soft structure, the elegant yet decisive taste, and maximum digestibility. The softness and digestibility are achieved by skillfully managing the various processing stages. A soft structure due to many aspects of this process but especially the use of live sourdough, which is refreshed and worked by our pastry chefs every day. We use only recognized quality raw materials: candied oranges handcrafted by us, which we finely chop into the dough to give it a unique and naturally citrusy aroma (you will not find candied fruit in its classic form inside our colomba), precious Bourbon vanilla from Madagascar, all flours are from Italian grains, the sugar is raw cane sugar, the butter is Breton obtained by centrifuge, and the honey is Italian acacia honey.

Our Colomba has four times the amount of eggs as common Colombe on the market, and this allows us to have a taste, structure, and color like no other. In addition to the already rich dough, our glaze is nine times richer in almonds, hazelnuts, and pine nuts compared to other commonly sold colombe.

How long do leavened products last?

All our products are artisanal and handmade. Panettone, Pandoro and Colomba have a shelf-life of 90 days. To receive information about all of our other baked goods, please contact us.

How can I properly store the products?
